Healthy Eating for weight loss: Mexican Fusion Quinoa Salad

Ingredients:

  • Mix of red and white quinoa, cooked
  • Avocado
  • Red Cabbage
  • Mango
  • Coriander
  • Cashew Nuts
  • Pumpkin Seeds
  • Lemon Juice
  • Coriander
  • Cayenne Pepper
  • Olive Oil
  • Salt and pepper to taste

Disclaimer: This is a kitchen sink salad. I’m not even going to attempt quantities. Just use whatever your sink suggests.
