Lunches I Love: Back on Track Supersize Salad

Would you like that supersized?

Most of the world it’s back to work after a festive season laden with mince pies, roasts, cookies, chocolate, not to mention the booze… I bet my left kidney (damaged goods anyway) that at least 80% of the population made some kind of New Year’s resolution to be more healthy come January 2014. It’s here, eek, and time to get back on track. But that doesn’t mean you have to eat like a bird (who wants worms?)…

Lovely large lunch salad. Healthy eatingCall me uncultured/a pig, but I’m not a fan of small portions. I’m also not a fan of being fat. Enter the Supersize Salad. When it comes to veg; the more the merrier in my books.

This particular monstrosity is an Asian themed kitchen-sink salad

Ingredients (as far as I can remember)

  • baby corn
  • big corn
  • tenderstem broccoli
  • cauliflower
  • shredded carrot
  • shredded red cabbage
  • sugar snap peas
  • red pepper
  • chickpeas

Dressing:

  • sesame oil
  • sesame seeds
  • soy sauce
  • rice wine vinegar
  • honey
  • cayenne pepper

Brimming and bountiful with colour and vitamins. Happy lunch-time munch-time!
