Clean Eating Date & Oatmeal Cookies – Gluten Free & Sugar Free

Date and Oatmeal Cookies Sugar Free and Gluten Free

With sticky date caramel, you don’t miss the refined sugar one bit!

Ingredients:

  • 1 cup chopped dates
  • 1/4 cup nuts & seeds
  • 1/4 cup water
  • 1 egg
  • 1 tsp vanilla
  • 2 tbsp. melted coconut oil
  • 1 tsp. baking powder
  • 1 cup quick oats
  • 1 tsp salt
  • 1 tsp cinnamon

Directions:

Preheat the oven to 180. Roughly blend the dates (without making them into a puree). Mix the dates, nuts, seeds, water, egg, vanilla and coconut oil. In a separate bowl, mix the salt, cinnamon, oats and baking powder. Add the dry mixture to the wet mixture and mix with a spoon until combined.

Roll into deliciously sticky balls and place on a tray lined with baking paper or spritzed with cooking spray.

Bake for about 15-20 min, or until you can take the tempting smell no longer!
