Summer cocktail party snack? Consider it sorted.
It’s a culinary crime for something this delicious and this pretty to be so easy..
- 1 bag chopped spinach
- 5 eggs
- 1 tub cream cheese
- a few fillets smoked salmon
Preheat your oven to 200 degrees. Lightly steam and strain the spinach. Beat the eggs, then add the spinach to the bowl. Spread the mixture onto a greased baking sheet and bake for 25 to 30 min until firm. When baked and cooled, spread the cream cheese over the spinach and egg layer, then cover with smoked salmon (thinly sliced smoked chicken will also work!). Then roll ’em up, and wrap tightly with clingwrap. Leave to coll in the fridge for about 3 hours, then slice with a super sharp knife.
