Meat Free Monday: Warm Health Bread and Spiced Butternut Soup

Warm, hearty bread steamy from the oven, and a hot butternut soup with spices tickling at your nose… what could be cosier?

And like my low fat, sugar free bananabread and beer bread.. no kneady yeast necessary!

  • 500 ml Plain Yoghurt
  • 2 Tbsp Honey
  • 2 cups Nuttywheat Flour
  • 1 cup White Flour
  • 1 Tsp salt
  • 1 1/2 Tsp Bicarb
  • Herbs, nuts, cheese, and seeds to your heart’s content. Also try rosemary and olives, and sundried tomatos


Mix, and bake for about an hour at 180 degrees Celcius.


2. Spiced Butternut Soup

While your bread is filling your kitchen with scrummy smells, whip up this easy butternut soup


  • 2 medium butternuts, cubed (an ROASTED, if you’re fancy)
  • 1-2 medium onions (depending on how much you can bear cutting)
  • 1-3 cloves garlic (depending how afraid you are of vampires)
  • A glug of olive oil
  • 1 – 1.5 litres stock
  • Spices: cayenne pepper, curry powder, cinnamon to taste
  • Herbs: Ground coriander, fresh coriander and/or rosemary (dried or fresh)


Glug the olive oil into a large pot, heat, and add onions. Saute for a minute or so, then add the garlic,  ‘erbs and spices. After another minute or so, add the stock and chopped butternut and apple. Put a lid on it, and stew until soft (add salt to taste if you need to).  Blend, blitz, take your bread out the oven and feast!
