No Bake Bite-Me Bars

Refined sugar free, gluten free, can be veganised (omit chocolate chips). No guarantees on the fat-free-front, but these no bake bars are such a hit with, well, anyone who has taste buds. 



  • 1 cup sugar-free peanut butter
  • 1/2 cup honey
  • 1/2 cup unrefíned coconut oil 
  • 2 cups dry oats 
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts/pecans (optional)
  • 1 1/4 cups dark chocolate chíps
  • 1 t vanílla extract

Melt the peanut butter, honey and coconut oil over medium-low heat.

Once the goodness has melted, remove from heat and add the oats, shredded coconut, chocolate chips and vanilla.Image

Pour ínto a pan and cool ín the frídge. When set, cut ínto bars and store in the fridge (if they last that long!)
